SELECT LOCATION

A complex wine of full body, made only from the best selected grapes of vines grown in older terraced vineyards. This is a variety that only matures in the best vintages. The final result is a harmonious whole.

Grape variety: Merlot 80%, Cabernet Sauvignon 20%
Wine growing region: Brda Slovenia and DOC Collio Goriziano Italy
Soil: Eocene flysch (marl, sandstone). 
Vineyard orientation: S, SW
Altitude: 170 m
Vine training: single Guyot
Grape harvest: October. Hand harvesting, selected grapes of Merlot and Cabernet Sauvignon at full ripeness. Gentle handling of grapes and must.
Naturally dried Merlot grapes are used in part.
Maceration: 18 days on the skins in barrique oak barrels at a controlled temperature. Fermentation is completed in barrique oak barrels.
Maturing: 4 years in barrique oak barrels.
Sugar level: dry
Wine is not filtered.
Bottle and packaging: Bordolese GOLIA 0,75 l/cardboard box of 6 bottles
Serving temperature: 18–20 °C. Decanting is recommended or opening the bottle about one hour prior to tasting the wine to let it breathe.
Description: dark ruby with brick-red tones. The bouquet is intense and unique. Complex fruity aromas of sour-cherry, dry plums and chocolate with a slightly piquant peppery taste. The wine feels structured, harmonious and elegant. Full-bodied wine with fruity freshness. Excellent aftertaste.
Great potential for ageing.

Strong appetizers: 
tortellini with beef tail, dishes with truffles
Main courses: beefsteak with porcini caps grilled over embers
Game meat: bear fillet, smoked fig, deer fillet in wine sauce
Chocolate truffle

Constantini blend with maturing capability of several decades, in bottles. Over the years of ageing, the rich structure and harmony of aromas gain in complexity, elegance and bouquet. The wine stays fresh, fullness of taste and vitality thanks to the micro-terroir and the natural production method.
